Spinach and Feta Bowties

What You Need:

3 tbsp. olive oil

1 large, thinly sliced red onion 2 minced garlic cloves 1 bunch fresh spinach (or more!)

1 chopped red, yellow, and orange bell pepper 3 cups uncooked fusilli pasta

Feta cheese, crumbled, 1/2 cup Cheddar cheese Freshly ground pepper

Pine nuts, 1/4 cup (optional) Instructions for Making the Spinach Feta Pasta: Heat oil in saucepan and sauté onions and garlic for 10 minutes.
Stir in the spinach until it wilts. Cover and cook for ten minutes over low heat. Cook until the bell peppers are tender. Drain the cooked pasta once it is tender. Toss warm pasta with the spinach mixture and feta cheese. If desired, top with pine nuts, pepper, and parmesan cheese.
